Gumbo is a staple down here on the coast and it is super easy to make Keto in your slow cooker. You literally throw all the meats along with the veggies in the slow cooker, then add in the shrimp about 20 minutes before serving.
3 lbs. Chicken Thighs, boneless and skinless
1lb. frozen Shrimp, deveined, no tails
1 lb. Sausage, cut into rounds
1 Bell Pepper, diced
1 Onion, Diced
2 Celery Stalks, diced
4 T Garlic in Olive Oil
6 ounces Tomato Paste
15 ounces Diced Tomatoes
1 T Cajun Seasoning
1/2 tsp each: Cayenne, Thyme, Oregano, Pepper
1/2 tsp Xanthan Gum to thicken the roux or….
If you are true blue Keto, you probably ingest Xanthan gum every day It is used in in toothpaste, medicine, ice cream, cosmetics, salad dressings and….gum. it isn’t bad for you and it certainly means using every part of the vegetable; it’s just a little creepy.
Here is how Wikipedia defines Xanthan Gum “ Xanthan gum is a sugar derived typically from corn (can also be from soy or wheat) that has been pooped out by a bacterium that produces rot on various vegetables.
However, if you have issues with using a thickener that began as bacteria on rotting veggies, I keep a large bin of my premixed flour blend on hand at all times so when I am ready to start baking, all I have to do is shake it up, measure it out, and use it as an all-purpose flour. There are four ingredients in my blend: brown rice flour, sorghum flour, arrowroot powder, and potato starch. It is a minor sacrifice and satisfies my poor little creeped out brain.
