The holidays area busy time for all of us and Starbucks coffee is certainly a respite from the storm.  I found this recipe on fitmomjourney.com that is a replacement of sorts for those yummy little egg bites they serve. But these are not quite so calorie laden and they are relatively easy to make. Even better, they refrigerate well and warm in a 15 second microwave easily!

  • 4 eggs
  • 8 ounces Gruyere Cheese, cubed
  • 1/2 cup full-fat Cottage cheese
  • 1/4 cup Half & Half
  • 1/2 cup Bacon Crumbles (or 8 slices of bacon, cut into pieces)
  • Salt & Pepper to taste

Directions: makes 16 keto egg bites
This recipe is designed for  an Instant Pot but since I don’t have one, I have altered it to make with a  regular oven. Works great but just be sure to test for doneness as all ovens are different!

Place the eggs and Gruyere in your blender and blend until smooth. Add in the cottage cheese, half & half, and salt and pepper, blending again until smooth.

Grease cupcake pan with coconut oil cooking spray, then sprinkle a few of the bacon crumbles in the bottom of each cup.  Pour the egg mixture from the blender into each cup and place into a roasting pan with 1-2 cups of water in the bottom – enough to fill below the edge of the cupcake tin.

 Seal with tin foil and place in 400-degree oven for 8 minutes. Test center for doneness with a toothpick. Remove from oven, uncover and let sit for 3-5 minutes.

  • Skinny Mocha: Order it with half heavy cream and half water.
  • Coffee Light Frappuccino:
  •  Again, order with half heavy cream and half water, then add a few pumps of sugar-free vanilla sweetness to pump up the flavor and sweetness level.
  • Sugar-Free Cinnamon Dulce Light: Yup, order it with half heavy cream and half water.  So delicious!
