THANKSGIVING LEFTOVER RECIPES

One thing I love in life is food. One thing I hate in

life is waste. So for this week’s tidbits, I decided to

combine both of these and provide some recipes for

three dishes you can make using your Thanksgiving

Day leftovers. Keep in mind that none of these recipes

are from me. I mean, I don’t cook. Perks of living

at home☺. If I have to make a meal for myself, 99

percent of the time I am eating nachos, pasta or a

sandwich. So these recipes are not from my brain

but from the brains of more talented individuals. And

I will link all the websites where I found these recipes

so you can go directly to said link if you like. Happy

Recipe One –Southwestern Turkey Soup

This recipe is perfect for a cold winter’s day. Not

that we get too many of those in Houston but, I

mean, it was freezing this past week so it does happen…

occasionally. Anyways, this is a quick and easy

recipe to follow and—when your meal is ready—you

can curl up on your couch and enjoy it while listening

to Christmas music ☺

The ingredients are:

1 1/2 cups shredded cooked turkey

4 cups vegetable broth

1 (28 ounce) can whole peeled tomatoes

1 (4 ounce) can chopped green chile peppers

2 roma (plum) tomatoes, chopped

1 onion, chopped

2 cloves garlic, crushed

1 tablespoon lime juice

1/2 teaspoon cayenne pepper

1/2 teaspoon ground cumin

salt and pepper to taste

1 avocado – peeled, pitted and diced

1/2 teaspoon dried cilantro

1 cup shredded Monterey Jack cheese

The directions are:

In a large pot over medium heat, combine turkey,

broth, canned tomatoes, green chiles, fresh tomatoes,

onion, garlic, and lime juice. Season with cayenne,

cumin, salt, and pepper. Bring to a boil, then

reduce heat, and simmer 15 to 20 minutes.

Stir in avocado and cilantro, and simmer 15 to 20

minutes, until slightly thickened. Spoon into serving

bowls, and top with shredded cheese.

Recipe Two—Annie’s Turkey Salad

Looking over this recipe, it kind of reminds of potato

salad—which I love. Related to that, here’s a story

for you. When I was living in Belgium, my family and

I went to a little restaurant in the city for dinner. I ordered

a meal with a side of potato salad. That’s liter ally

what it said on the menu under “sides” –potato

salad. I hadn’t had potato salad in months, maybe

years, and I was so excited. So imagine my disappointment

when, instead of the typical potato salad

that I am used to and was expecting, these people

brought me potatoes and salad. Fortunately, this recipe

seems to be a delicious delight, unlike the nonsense

I received that claimed to be “potato salad.”

The ingredients are:

6 eggs

6 cups cooked turkey meat

1 (16 ounce) jar sweet pickles, chopped

1 1/2 (10 ounce) jars mustard-mayonnaise blend

3/4 cup mayonnaise

The directions are:

1. Place eggs in a medium saucepan and cover

with cold water. Bring water to a boil and immediately

remove from heat. Cover and let eggs stand in hot

water for 10 to 12 minutes. Remove from hot water,

cool, peel and chop.

2. In a large bowl, thoroughly mix the eggs, turkey,

pickles, prepared sandwich and salad sauce and

mayonnaise. Chill in the refrigerator approximately 3

hours before serving.

Recipe Three—Thanksgiving Turkey Shepard’s Pie

You can use many terms/phrases to describe me.

Future teacher. Journalist. “Has crushes on way too

many attractive male celebrities”. One Direction fan.

But the phrase/term that probably best describes me

is Harry Potter fanatic. I LOVE the series. I have read

the books and seen the movies countless times, the

people in the movies are some of my favorite celebrities

and I am sitting here crying because the new

Fantastic Beasts movie is out and I can’t watch it until

December 1st. Now, the one thing I loved about the

series is the amount of detail that went into them. Like,

even the meals they ate were so well-written that I

wanted to make all the dishes. And one

such meal that was eaten quite a lot in

the books was Shepard’s Pie. And now,

I can try it because I have the recipe

thanks to a blog post from a website

called BakedByRachel.

The ingredients are:

2 tablespoons unsalted butter

3/4C onion, chopped

1/3C celery, chopped

1/3C carrots, chopped

1 clove garlic, minced

2 1/2C leftover turkey meat

1/4C peas or green beans

1/4C corn

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/2 teaspoon dried thyme

1/2 teaspoon dried basil

1C gravy

2C mashed potatoes –should use roughly 3/4

pound potatoes should be used

4oz cheddar cheese, shredded

The directions are:

Preheat oven to 350 F

In a large skillet over medium heat, melt butter. Add

onion, celery and carrots, cooking until onions are

translucent. Add minced garlic, cooking for an additional

minute. Add turkey, corn and peas (or green

beans), along with seasonings and gravy, cooking

until heated through. Transfer to a 1 quart baking

dish, pressing into an even layer.

Heat mashed potatoes until luke warm and easy to

stir. Add half of the shredded cheese to the potatoes,

stir to combine. Spread mashed potatoes over the

turkey filling. Sprinkle with remaining cheese.

Bake for 30 minutes. If desired, broil or use a kitchen

torch to char cheese slightly. Serve warm.
